Where do chefs eat? With Luana Budel, from Le Cordon Bleu, in São Paulo

With experiences on national soil and also in Europe, the gastrologist’s career Luana Budel leans over a market that has been gaining more and more fans every year: a plant based kitchen.

Specialist in the subject, in the beginning of the decade of 2000, she arrived to work in some houses in São Paulo, as the Namesa, first restaurant of Alex Atala . But it was in 2005 that he left for amsterdam to serve as chef at the vegetarian bistro Green Planet Restaurant.

He returned to Brazil after four years in Europe and immersed himself in the country’s native ingredients in order to combine their properties with functional cuisine.

With a background closely linked to academia, the consulting chef is a professor and researcher in undergraduate and graduate courses in Brazilian and functional gastronomy.

Recently, Luana also assumed the position of coordinator of the gastronomy course plant based at the Le Cordon Bleu unit in São Paulo.
