Where do chefs eat? With Fernanda Pamplona, from Albero dei Gelati, in São Paulo

Fernanda Pamplona is ahead of Albero del Gelati and has a very special motto: “everything that is good can become gelato”.

She has had this affectionate look at ingredients for many years, ever since she worked at the São Paulo City Hall and operated some projects in Parelheiros, getting to know the community and small producers in the region.

When he went to live in Italy with his family, he met the head office of Albero del Gelati, in Milan, and discovered in the walls of the gelateria the connection of his passions: small production, sustainability and gelato.

In the daily routine of the gelateria, in addition to being responsible for creating the flavors, Fernanda also handles the entire operational part and maintains a very close relationship with the producers.

“Nominations are based on places that prioritize the use of fresh ingredients. Just as I try to bring it to Albero dei Gelati, I like to know and visit places where I know there is a concern with seasonality and respect for inputs when delivering recipes with quality ingredients”, comments Fernanda.

Motique Restaurant

A restaurant in Pinheiros with a kitchen led by Victor Magri . The beauty and friendliness of Charlotte in service complement the charm of a beautiful and cozy space.

It was the best Bao I’ve had in a while, made with tempura shrimp. The cauliflower salad and coalho cheese is also a must.

Motique Restaurant: Rua Simão Álvares, 985, Pinheiros – São Paulo – SP / Opening hours: Tuesday to Friday, from 12pm to 3pm and from 6pm to 11pm; Saturday, from 12:00 to 23:00; and Sunday, from 12 pm to 4 pm. It does not open on Mondays.

Strain

A restaurant in Tatuapé led by the chef Lucas Dante and the sommelier Gabrielli Fleming . I found the menu entries a 10.

The titty to the point of the house is a must and I highly recommend a chat with Gabrielli to recommend a delicious wine to pair with the food they serve. There is a concern with the ingredients selected in preparations that respect seasonality. I think the address is unmissable!

Carlos Pizza

When the desire is pizza, it soon comes to me Carlos Pizza in the head. They always serve a perfect round with the thin and crispy crust, which for me is fantastic, as I like to eat without cutlery. The inputs used in the preparations are always of high quality and the filling is placed in the right measure.

Mila SP

I cannot fail to recommend an Italian restaurant in this deal. So, one place that I have really liked is the Mila SP on Bandeira Paulista street.

There they offer a nice space where we sit and we wouldn’t want to get up, always very attentive service and an open kitchen where we can follow the chef’s charm. Pedro Pineda to orchestrate the kitchen.

Among the items on the menu, I really like the pappardelle with white ragù and the grilled octopus.

Mila SP: Rua Bandeira Paulista, 1096, Itaim – São Paulo – SP / WhatsApp: (11) 2925-8442 / Opening hours: Tuesday to Friday, from 12 pm to 3 pm and from 7 pm to 11 pm; Saturday, from 1 pm to 6 pm and from 7 pm to 11 pm; and Sunday, from 1 pm to 5:30 pm. It does not open on Mondays.

Vivianne Wakuda

choux cream vivianne wakuda

If you are looking for a dessert served with perfection from its presentation to the taste, you can look for the patissier chef I lived Wakuda.

Everything that is prepared there has a lot of delicacy just looking at it. On the menu, the choux with vanilla cream cannot fail to be ordered. And hats off to the lemon and pistachio cake with a surreal balance.

Vivianne Wakuda : Al. Nhambiquaras, 1410, Moema – São Paulo – SP / Opening hours: Tuesday to Saturday from 9:30 am to 6 pm.

the guapa

A good tip for a quick snack is the La Guapa Empanadas gives Paola Carosella . I love the flavors she serves in the delicacy, always filling and tasty, in addition to being of the same standard and a factor that I consider very important: fresh ingredients.

Geiko-San

I like to sit at the counter and admire the chef’s beautiful work Fabrizio Matsumoto . There you can’t go wrong with your order, you can order any item on the menu and I’m sure you won’t be disappointed.

They serve Japanese cuisine where they combine the traditional with the contemporary and whenever I’m in the mood for Japanese food, the address is one of the first options.
