The story is almost a gastronomic fairy tale: a recipe lost among travel notes from the gaúcha Tábata Tubino became one of the most celebrated in Rio in 2021 – to the point of delighting chefs like Claude Troisgros and Felipe Bronzethe actress Bruna Marquezine and the singer Lulu Santos.
It was during the isolation of the pandemic that Thábata, a former event producer, decided to reproduce a delight she had accidentally tasted during a bar tour in Madrid.
He liked the result so much that he decided to start selling his version of queso pie basque — a Spanish cheese pie characterized by burnt and caramelized edges.
The recipe has four basic ingredients: cream cheese, sour cream, egg and sugar. It differs from American cheesecake in that it is less sweet, has no coating or syrup and also has a more velvety texture.
“I created an order channel through Instagram and, through word of mouth, sales exploded”, says Thábata. “They jumped from 30 units one month to 300 the next”. That’s how the from Thabataa brand specialized in this famous dessert, also known as “burnt cheesecake”.
After a year of baking the pies in her apartment in Botafogo, Thábata was invited to open her first physical store, which opened its doors three months ago on the 3rd floor of Shopping da Gávea.
In addition to the traditional cheesecake, with a discreetly sweet taste, she created six other versions: pistachio, coconut, coffee, zero sugar and two others with the noble Belgian chocolate Callebaut (milk and 70% cocoa). One of the latest novelties is the salty one, which takes gorgonzola and parmesan and is served with candied grape tomatoes. Each slice costs between R$24 and R$29.
You can accompany it with brewed coffee, special beers or Aureah red vermouth, served Spanish style (R$ 28) – that is, in a glass with plenty of ice, a slice of orange and two olives skewered on a toothpick.
