According to data from the United Nations, almost 10% of the world’s population lives in a situation of hunger today, and almost 30% in a situation of food insecurity. Meanwhile, around 17% of all food available for consumption in the world in 2019 was wasted at different stages of the overall supply chain.
To bring visibility to this cause and awareness of food waste, the S.Pellegrino joined the Gastromotiva Refettorio for an action that seeks to inspire and raise such an important topic at the moment.
Refettorio Gastromotiva was opened in 2016 in Rio de Janeiro by David Hertz and Alexandra Forbes in partnership with Italian chef Massimo Bottura, founder of the Food For Soul organization, which aims to combat global food waste.
The initiative was divided into two phases: In the first, the team of chefs separated into groups for each night – Claudia Krauspenhar, Fabricio Lemos, Felipe Schaedler, Gerônimo Athuel, Giovanna Grossi, Kátia Barbosa, Lisiane Arouca, Luiz Filipe Souza, Nello Cassese, Tássia Magalhães and Tabatha Bertoni – meet at Refettorio Gastromotiva and offer three social dinners on the 24th, 25th and 26th of October.
In this immersive experience, they cook a zero-waste menu consisting of a starter, main course and dessert using ingredients donated to the organization for the more than 70 beneficiaries received per night, people in situations of social vulnerability.
In addition to the kitchen masters, the dinners are supported by the Belmond Copacabana Palace and volunteers who will do the night service. In the second phase, seeking to expand awareness, a special invitation to partner chefs of the Italian beverage brand to bring into their restaurants a zero-waste dish created during Refettorio days, which will be sold in their restaurants during the month of November.
