Sabor das Águas, in Leblon: “dry aged” fish with great seafood snacks

One of the leading meat experts in the Rio de Janeiro, Marcelo Malta provided special cuts for the best restaurants in the city before opening, in 2016, Sabor DOC, in the famous Rua Dias Ferreira, in Leblon .

The house, which was born with just 12 places, was so successful that it migrated to the neighboring property, which was much more spacious. It was then that Malta – also a member of the Malta Beef Club – decided to transform the old Sabor DOC point into a new business, focused exclusively on fish and seafood.

Before settling down at the sidewalk tables, pop into the tiny indoor lounge to enjoy the whole fish that is dry-matured at a controlled temperature for up to 10 days – a kind of dry aged which gives the meat more tenderness and also helps to concentrate the flavors.

The customer chooses the fish (bream, dog’s eye, red, boyfriend, grouper, among others), which is whole in the heat of the coals, seasoned with salt, paprika and olive oil. It is then flattened and its central spine is removed before going to the table.

Although, naturally, the whole fish attracts attention, the list of starters to whet your appetite is also special.

Don’t miss, for example, the octopus espetada (R$48), with the enviably soft shellfish accompanied by panko farofa and vinaigrette, or the cavaca roll sandwich (R$55) – a version of the lobster roll with grilled cavaquinha, sriracha pepper aioli and leek crispy.

The cuisine is still beautiful in the slices of raw fish (olhete was served on the day of the visit) bathed in delicious miso sauce, finger pepper and sesame (R$ 52).

When sipping, the occasion calls for a white, rosé or green wine, such as the Portuguese Azevedo Loureiro & Alvarinho (R$ 155), from Quinta de Azevedo.
