When we go in search of Southeast Flavors Minas Gerais appears as a territory where food, affectivity, tradition and memory interspersed with a delicious banquet. To talk about Minas is to talk about cheese, crackling, handcrafted products and especially people in love with their homeland.
On my journey in search of Southeast flavors for the special season CNN Viagem & Gastronomy: Flavors of Brazil I landed in Belo Horizonte to taste a “crucible” of state flavors.
To fulfill the mission, I went to the Central market one of the most emblematic sights of the capital of Minas Gerais, to try various cheeses, one more delicious than the other. To finish the experience, a lunch in Xapuri with the right to pork rinds, angu and cookware in the firewood, crowned my passage through “Beagá”.
Typical mining food
As a good granddaughter of miner, summarizing the culinary traditions of Minas Gerais in Cheeses is almost a sacrilege. Therefore, a lunch at the Xapuri restaurant is able to show a little more of the state’s flavors with the help of a full table.
Mandatory stop in Belo Horizonte, here the food is treated as an institution. Cheese bread, angu pastel, crackling, jiló with cheese, tropeiro beans, okra chicken and cachaça abound.
“Minas Gerais food begins to have this format and identity from the coming of the Portuguese. It is an indigenous, African and European triad,” account Flávio Trombino chef ahead of Xapuri.
While we talked, the stamp wood and the clay pans smoke. For lunch, he prepares a thigh and boned thigh, grilled in the orange juice butter.
Angu Mineiro is also here and, although traditionally only brings Fuba and Water, the house follows the Italian fashion, with cheese, milk and butter. The meat is also served with toasted tomatoes without skin and curd with zest.
Flávio is guardian of the wood stove and redneck food, teachings transmitted by his mother, Nelsa Trombino, founder of the restaurant and left us in 2023.
For the chef, What is the taste of Brazil? “It’s diversity and wealth. Brazil is gigantic. France fits within Minas Gerais, for example,” he replies. But I go further. And the taste of Minas, what is it? The answer is simple but powerful. “It’s affection,” the chef stits.
