Launched in mid-2020, the Koya88 quickly became a darling address in the capital of São Paulo. With cocktail signed by Thiago Pereira and cuisine with an Asian personality from the chef Thiago Maeda the place with a relaxed atmosphere almost had a slogan “we don’t have sushi”.
But now that has changed! They not only have sushi, they also serve a beautiful omakase prepared by the sushi man. Simon Ito 🇧🇷

The inspiration for Koya88’s omakase came from the New York undergrounds that house proposals such as Sushi by Bou, a mix of speakeasy and omakase, and Sushi on Me. The Koya88 version, which opened in November, is on the mezzanine floor.
There are only six seats at a single counter, unlike the classic versions, the atmosphere is relaxed and dimly lit, in which Simon simultaneously serves all the gifts with the freshest in an interesting contrast of flavors.
Simon Ito, who has worked with Thiago Maeda and Thiago Pereira at the extinct Tessen, also worked for Huto, Aya, Aizome and Sushi Kyu, in addition to a season living in Japan.
The course includes 3 zensais (appetizer), 15 sushi that vary by season and freshness and a dessert for R$240. For a surplus of R$100 it is possible to drink sake throughout the tasting. Among the sushi options you can find options such as sole marinated in kombu, sea bass with umeboshi and shiso, viera with citrus sauce and katsuobushi, abalone, among other delicacies.

The omakase is open from Wednesday to Saturday and reservations are to start at 20:00 and 22:00, with a tolerance of 15 minutes of delay.
