The culinary expert addresses these so-called “blasphemous” culinary theories in his and fellow academic Daniele Soffiati's book “La Cucina Italiana Non Esiste” (Italian Cuisine Does Not Exist), which attempts to dispel the myths around her, the Telegraph reported. “Pizza has gone red in America,” Grandi, who teaches at the University of Parma in northern Italy, told La Repubblica newspaper in an interview.
