Escama, a fish and seafood restaurant in Rio, launches a tasting menu

Son of the famous chef Claude Lapeyre one of the pillars of French gastronomy in Rio de Janeiro, Ricardo Lapeyre he returned to cheer the cariocas with his Franco-Brazilian recipes.

Ex-Laguiole and ex-Bistrot Lapeyre, he inaugurated in 2021 the Scale which has already established itself as one of the best fish and seafood restaurants in the city.

Now, the address installed in the Botanical Garden has launched a great novelty: the Chef Par Ruinart’s Table an exclusive table on the upper floor of the house where tasting menus are served for a maximum of eight customers per night.

Available from Tuesday to Saturday only for dinner, the project is in partnership with Ruinart Champagne – a maison founded in the French city of Reims in 1729 – and includes a bottle of Ruinart Blanc de Blancs for every 4 people.

On the day of the visit, Ricardo Lapeyre and his fine team started the 7-stage menu with two good starters. In one of them, they combined cubed bull’s-eye fish with stracciatella cheese and orange zest; in another, foie gras mousse and miso arrived under a delicate blade of raw tuna.

On the menu, which varies according to the best raw materials available on the day, you can also find scooters from Pernambuco served with a tasty velouté of palm heart, grilled crayfish with lime and grilled whiting with great mashed banana. – land with curry.

Finally, a delicious lemon meringue pie came on the scene.
